Garlic Tomato Eggs is almost like an omelet and very simple to make. The interesting part of this food is the umami flavor due to the addition of tomatoes. To make this simple recipe, just heat a pan and add in olive oil. Once the oil is hot enough, add chopped garlic cloves, saute for minute.
Crack open the eggs on the pan, place the tomato slices, sprinkle spices and add fresh coriander leaves. Cover the lid and allow the dis to cook in steam.
